This meatloaf is amazing. Lean, ground beef is seasoned just right, then covered with a touch of sweet ketchup sauce. Our potato skins stuffed with mashed potatoes, cheddar cheese, bacon and fresh green onions are a perfect pair. Kids and adults will ask for seconds. Preparation Instructions
four servings Thaw in refrigerator. Preheat oven to 325 degrees. Loosely cover meatloaf with foil. Bake for 1½ hours. Uncover and top with additional sauce. Bake 30 minutes more or until a thermometer inserted in the thickest part of the loaf registers 165 degrees. Let stand for 10 minutes. Potatoes: Set the potatoes on a baking sheet, and bake until heated through, about 20 minutes. Serve immediately.
